Caterers is more than a catering company. Of course, we work to have a successful business that serves delicious, fresh food, but we want more than that. We strive to be a positive force in the charitable community, to support the local foods movement by sourcing product from nearby farms, to actively participate in educational programs and to lead by example with positive environmental practices. We are proud our staff's talent and commitment to education & knowledge.

Amanda Got Married!

Ely Brothers Studios dropped off the photos from Amanda's wedding! We wanted to tell everyone more about Katherine, and she has graciously (she does everything with grace) shared with us her intriguing story...

"Greetings! It is a gorgeous day on the Farm! The baby goats are playing, the new chicks are peeping, the sheep are grazing peacefully, and even the cows appear content!"

How did you get interested in farming?

"I grew up on my grandparents' farm in Canal Winchester. I am the 5th generation of Harrisons to work this particular farm. The Harrisons originally settled in Virginia in 1635, where they spent several generations before being awarded a land grant in Knox County for service during the Revolution. My ancestors farmed there for a few generations, before moving to our current farm. I grew up with farming, and I can imagine no other life. My childhood was spent working with sheep, baling hay, and riding horses. It was hard work, but it was a good life for a young person. Farming may be a job, but greater than that it is a passion and a calling. I truly believe there is no endeavor as ancient or as noble as the care of the earth and God's creatures."

What do you raise/farm?

"My focus in agriculture is raising livestock. I find animals fascinating, challenging, and rewarding! I own a commercial meat goat herd -- which means these are goats raised specifically for meat. I currently have about sixty does (female goats), and I select those that are independent, hardy, and maternal. Every animal on the farm has to work, so I only keep females that are good mothers. Between January and March, I had 61 baby goats join the herd -- and they keep me very busy! Most of these will be marketed through my family's slaughterhouse, to the ethnic community within the Columbus metropolitan area. I also raise chickens for fresh eggs and typically have 2-3 cows & pigs on the farm at any given time. I purchase the cows & pigs from local farmers when they are small and feed them until they are ready to be butchered. I have a beautiful horse named Flirt, 2 lambs named Bette Davis & Olivia deHavilland, and three wonderful dogs. One dog was a stray that I rescued, and the other two are Pyrenees guard dogs that live with the goats and protect them from coyotes (which are a major problem, even in Franklin County!)"

Where is your farm?

"Harrison Farm is located just south of Canal Winchester. I market most of my products at my family's butcher shop, Blystone Farm. In addition to the animals that we raise, we source from other farmers who also focus on naturally raised animals. We strive to cater to the ethnic community -- which seeks fresh, ritually slaughtered meat -- and we recently opened an on-farm retail shop to meet the needs of customers who are interested in locally raised products. We offer lamb, goat, beef, chicken, pork, eggs, honey, and other fresh products!"

You went to Europe last year. What was that about?

"My trip to Europe was OUTSTANDING! I had the pleasure of being awarded the McCloy Fellowship to study agriculture in Germany. I travelled all over the country for almost a month, and saw the diversity of farms -- and farmers -- there. I had the pleasure of visiting many farms, touring related businesses, meeting with politicians & policy makers, learning about regulations that impact European agriculture, and being immersed in German culture! It was an amazing opportunity that gave me a greater perspective on the international scope of farming!"

Katherine with Ohio Supreme Court Justice Yvette McGee-Brown.

You now have an official position with the Ohio Farm Bureau. Tell us about that and why it is so cool.

"Last December, I was elected to the Ohio Farm Bureau Federation Board of Trustees. I represent Delaware, Franklin, Madison, and Union Counties on the board, and I am the first female to hold this leadership position. Farm Bureau is the largest agricultural organization in our state, and it works to represent the interests of farmers through creating partnerships with consumers & advocating for policies that benefit the farm community. In Ohio, agriculture is diverse, & its future is vibrant! Our metroplitan area is blessed to have large farms outside of Columbus, as well as small operations throughout the area that celebrate niche products -- like local meats! I am extremely excited to be able to serve on the board that guides Farm Bureau and to be able to offer a youthful perspective on farming!"

What other professional organizations are you involved in?

"As a young person in farming, I believe it is very important to be involved in agricultural leadership in order to connect with our consumers and to educate our leaders on what America's farmers need to keep producing abundant, healthy foods -- as well as fiber & fuels. In addition to my work with Farm Bureau, I serve on the Emerging Entrepreneurs Committee for the American Sheep Industry, I am the secretary of the Eastern Cashmere Association, I am on the executive board of the Ohio Sheep Improvement Association, and I volunteer with the American Goat Federation. I also do quite a bit of public speaking, livestock judging, and consulting for farms & slaughterhouses."

How did you get involved with Two Caterers?

"After running my family's slaughterhouse for 5 years as general manager, I decided I wanted to focus more on my farm operation. I continue to assist my step-father with the butcher shop in a consulting role, but I was looking for new challenges with my farm and wanted to dedicate more time to promoting farming through education & policy work. The goats, however, like to eat . . . A LOT! Thus, I was looking for part-time work that was flexible around my farm schedule and my time responsibilites as the care-taker for my 95 year old grandmother. My friend Jodie worked at Two Caterers and spoke highly of it. Despite being a goatherd with no catering knowledge, Amanda kindly took a risk in hiring me. I was fortunate to work with some great Event Supervisors who provided excellent training, especially Sondra, Caren, Kate, and Robin. My first night of work, Sondra asked if I knew how to set up a chafer. I think my response was along the lines of 'I'm so sorry -- I don't know what a chafer is! I'm a butcher!' Great co-workers helped me to learn the process, and I soon figured out that organizational skills translate . . . whether setting up for a wedding reception or running a slaughterhouse on an Ethiopian holiday!"

Why do you like being a team member at Two Caterers?

"The absolute best thing about TC is the people! I love love love the people I work with! From the office staff to the operations team to the amazing chefs and service staff -- it is a great environment of people who gladly work hard and want to have fun doing it! Having run a business myself, I know that this attitude emanates from the top down. Angela has created an environment where people feel valued and want to work . . . especially because we know there is no job we are asked to do that Angela would not gladly pitch in and do herself. This attitude is further conveyed by the team in the office. I am always amazed that no matter how life -- or the goats -- may frustrate me, I feel better when I see my friends at TC! Beyond this, it is a company with values that match my own: respecting the environment, connecting people to food, and supporting local businesses."

What are your goals for the future?

My goals on the farm all come back to my values: I want to be the best steward that I can for the land & the animals in my care. My faith, my family, my friends, and my farm are the most important things in my world. I hope to expand my livestock operation and assist in promoting my family's butcher shop. I want to work to cultivate policies that encourage farming in our community and increase the viability of local foods & local businesses. I intend to continue educating the public on the joys & challenges of farming, and I hope to expand the internship program that I do through Ohio State University to encourage more young people to have hands-on learning experiences on a farm."

Katherine and her family offers cases of fresh, quality meats, including lamb, beef, goat, pork, and chicken. The farm market also offers products from other local farms in our community, such as eggs, honey, pasta, and bagels, and they are proud to offer Halal options for Muslim clientele.

Katherine also has a fantastic blog at www.harrisonfarm13.blogspot.com! You can also visit the Harrison Farm Facebook Page.

Plant Those Table Tents!

Now is a great time to plant the table tents you receive with your delivery. Last year, we made the decision to switch from a table tent that included a small plastic vase to this very attractive, totally compostable table tent that is embedded with wildflower seeds. More information about the switch is here.

We recently received an email from a client who was curious about what flowers are in the paper. What a great question! We looked up the manufacturer with a little help from our friends at Igloo Letterpress (who did an amazing job with this project.) This is handmade paper from Canada and is embedded with Bird's Eye, Clarkia, Black Eyed Susan, Sweet Alyssum, English Daisy, Catchfly, and Snap Dragon.

So get planting! We'd love to see photos of your Two Caterers table tent gardens!

Foodcation: So a dog walks into a bar...

Angela's Trip Diary - Seventh Installment:

"As most folks know I really love animals. Especially dogs, of which my huband and I have three. I love them A LOT. So I gravitated to taking pics of dogs almost immediately on arriving...

There are many more believe me.

So I think a trip to Vietnam and a travel diary heavily influenced by my experiences with cuisine would by incomplete and somewhat disingenuous if I didn't touch on the topic of dog as a food source.

They do indeed eat dog here. From my conversations, it seems like it occurs much more outside of Saigon, and I didn't see the signs for it as I did in the central regions and the North.

This is a larger restaurant that specializes in dog or Thit Cho. But there are many small places that advertise the meat as well.

My opinion, for what it's worth, is this:
You don't know what poor means until you travel outside the United States. People eat what they have. Dogs reproduce quickly and are an abundant source of protein as well as a way for some families to earn income. More than a few people told me about their parents selling the family dog to the meat man when they were children. It clearly made them sad, but they also understood their parents did what they had to do to get money for the family. So, while I had an amazing time in VietNam and tried a lot of wonderful cuisine, I come away from this experience so incredibly grateful for what I have."

Foodcation: Random Things I've Eaten, & Hold The Sparrows Please

Angela's Trip Diary - Sixth Installment:
"Hanoi, to the un-initiated, may call to mind a dour communist capital. Saigon, on the other hand, sounds like the exotic place we think of when dreaming of a Vietnamese adventure. I didn't really know what to expect of Hanoi, so I didn't really plan much for that part of my stay.

Hello. Hanoi ROCKED! First of all, it's beautiful. There is a lot of French architecture left from the period of colonial rule which began in the mid-19th century and ended with the infamous siege on Dien Bien Phu in 1954. There are serene little lakes, with temples, cafes and shady resting spots that make Hanoi just a little bit easier to handle than the constant hustle and bustle of Saigon. I had lots of fun shopping in the Old Quarter and randomly seeking great street food opportunities.

I had to know what was in this basket. I chased this woman for two blocks.

How hard can it be to chase down one tiny woman with a basket on her head? I'm not sure it photographically translates but you dodge this...

and this...

and then you still have to have teeth left in your mouth to eat whatever is in the basket!

Which was mmmmmmmmmmm! Hanoi donut holes! In different flavors! My favorite was the one with sesame seeds. There was also one that had a ginger glaze. Delicious. Five thousand dong each, or twenty five cents US. I had 6 before I gave up.

I've spent a lot of time walking around each new city I have visited. I pride myself on being pretty good at reading maps and really getting a sense of where I am rather quickly. I like taking little side-streets and staying off the main drag. That was that a HUGE mistake in Hanoi. I got so hopelessly lost this morning it was pitiful. And it was a little cold. And I was hungry. And I started to get a little homesick. And, oh dear... no... please tell me that wasn't the telltale turning in my bowel region indicative of "travel flu"?

AAARRRGGGHH!!!!!!!!

Wait. What's that smell? Pho!!! I'm saved!

Just when things look darkest, you can count on some great pho cook to set up shop on a street curb and everything seems brighter. These ladies were somewhat startled, but ultimately delighted, when I grabbed the ubiquitous tiny plastic stool and sat down for a bowl. It was so amazing on a chilly morning.

I would love to say that I found my way back on my own, but after circling the infamous Hanoi Hilton a third time, I gave up and hailed a motor bike taxi to drive my sorry butt back to the hotel.

Oh, and about those sparrows...

I just couldn't do it."

Foodcation: Last Meal in Hue and "You did WHAT?"

Angela's Trip Diary - Fifth Installment:
"We were very fortunate to have a guide in Hoi An and Hue named Ms. Han who loves food as we do. She was thrilled that we were so excited to try the special dishes of her country. Han is from Hue and grew up near the Citadel which was largely destroyed during the Tet offensive in the spring of 1968. A few buildings remain in the compound and it is truly beautiful!

Grounds just inside the Noon Gate at the Citadel. Pretty sure that is an African elephant
and not the smaller indigenous Asian elephant, but I can't prove anything and the elephant's not talkin'.

As a last Hurrah on our way to the airport for a flight north to Hanoi, we stopped at Han's favorite noodle shop for the Hue version of noodle soup. Just as each city specializes in certain foods, EVERY city, town, and burg in VietNam makes their own version of noodle soup. This was so awesome! It's served with plates of greens, chilies, and limes, and you just moosh it all into your noodles and get after it.

A very happy Dave who is enjoying some
Hue Bahn steamed thingies.

Han and our driver Lemon.
For some reason she called all of our drivers "Lemon". I called all of our drivers "OHMYGODGETMEOUTOFTHISCARALIVE".

When in Hoi An, I got up early and walked to the market. This is when the entire village buys and sells most of the fresh food they need for the days' meals. The main market is along the river and it's really spectacular. It's worth getting up early for. There aren't many tourists, and you can really watch people go about their daily lives, smell the smells (some good, some a little freaky, mostly good.) Walking the markets in the morning have been the times that I felt the most connected to the people and culture of Vietnam.

Which may be why I let down my guard...

And ate a raw unwashed slice of this...

I was so intrigued when I saw it that I stopped to smell it. These nice ladies were slicing it up and offered me some. I was feeling this amazing sense of belonging, you know? Like somehow the 5 foot 9 blond chick with one word of broken Vietnamese was just one of the crowd.

"Oh yeah. You blend".

So I ate it. And they were so tickled they gave me another. And I ate that too. It was a little bitter but pretty tasty. I would love to pickle it, it was begging for the sweet and sour treatment.

So on the ride to Hue I mentioned to Han that I tried a few slices of weird vegetable at the market. Color drains from her face. "You ate unwashed vegetables at the market" she squeaked. "You shouldn't do that. It will make you sick. Very very dirty. Bad for you."

Remember, this is the girl that thinks it's safe to eat meat that's been sitting out for hours and condiments that are constantly double-dipped and unrefrigerated.

I showed her the picture so she could at least name my folly. "Oh that's (something Vietnamese). You'll be ok. It's fruit." Well alrighty!

I asked around later, and I think it translates to Balsam Apple but don't hold me to it. Plan to see pickled Balsam Apple in your lives on my return if I can find it. But remember - it's not a vegetable."

Editor's Note: We looked into this Asian "Balsam Apple" and found that it is commonly called "Bitter Fruit." Apparently, Angela was eating unripened fruit because ripe bitter fruit is yellow with a bright red mushy inside!

Foodcation: Frog Legs, Chicken Feet, and Mystery Meat... We had mentioned to our guide that we were in the food biz so she took us to a little village which is part local food production center/part tourist stop.

We started off at the honey factory. The bees are only fed from the Longan trees so the honey is very sweet. We were served tea which was amazing on my sore throat. Dave got to play with a python and sample a shot of snake hooch. He bought a lovely bottle of scorpion moonshine — HE is needing to figure out how to get it through customs!

Next we went to a little rice paper factory. This woman has been making these wraps for 60 years using the same method. She let me try my hand at making a rice paper wrap. Sadly, it didn't go well. But we did get to eat it. Pretty amazing to have it fresh like that dipped in fish sauce. Mmmmm. Just need some street meat, and you are ready to roll!

The rice paper wraps are dried in the sun. My biggest fear was clearly some kind of food borne illness followed by "flu-like symptoms." I came prepared for something like this with Tums, Immodium, and if that didn't cut it, a course of antibiotic. But I end up with swollen glands?! Are you kidding me? I decided this was unacceptable, and after getting some sketchy over-the-counter cough and cold medicine (at least I think it was cough and cold medicine), I decided to tempt fate further by having a delicious meal of...

STREET MEAT.

Here is what I was advised NOT to do while in Vietnam:

1) Eat street meat.
2) Eat uncooked vegetables and fruits.
3) Ride scooters in Saigon. (Different story, but I'm alive to tell about it.)

For those of you who know my no eyelash rule (Editor's note: Angela does not eat beef, pork, lamb, or basically anything that has eyelashes), hold on to your tiny plastic seats (EVERYONE sits on these things here).

I was told this was pork:

Basically a seller cooks skewers of some kind of meat right on a tiny grill on the sidewalk, and you sit at their little seats (seriously they are like 10 inches tall) at a little table. They bring a tray of skewers, dry rice paper, spring roll wraps (wet rice paper), condiments, lettuce and greens and funky herbs, sliced cucumber and other green vegetable matter, and you make spring rolls out of it.

Common sense would tell me not to ever eat condiments that have been sitting unfrigerated in the tropical sun and double-dipped into day after day.

But I didn't care! It was DELICIOUS!

Big shout-out to my new friend Mang, who calls herself Papaya, for pushing me out of my comfort zone!

Angela and her new friend Papaya tempting fate!

Oh yeah - I should mention that I am in Hoi An which is in central Vietnam by Danang. Angela said it was probably the size of half of downtown Columbus.

This market has EVERYTHING. Including bird's nests. You know, for bird's nest soup.

"The hotel is in what I assume to be a working-class neighborhood by the airport. I did a bedbugs scan which came up negative, and although I wouldn't necessarily recommend it to everyone, it was worth every penny of the $16 bucks, comes with free beer, weird breakfast with good coffee AND the added bonus of a very regular wakeup call that started around 4:30am. The origination of which was a decidedly non-foghorn leghorn-type rooster outside my window that I'm pretty sure I ran into a few hours later with a few of his posse.

We were being picked up at 9:00 that morning so had a about 45 minutes to kill and figured "Hey, let's just walk around the block of our hotel." Started out great. There was a school somewhere in the neighborhood so there was this singsong background music in adorable little kid voices. A few people were riding scooters and bicycles, setting up street stands.

I bought a coconut that someone cut open for me and had the best fresh juice! Then slowly more and more people are on the streets. And what seemed like a simple square block was a maze of people and buildings and scooters flying around at breakneck speeds. We are so totally lost.

I wish I could describe what the streets are like. There were people selling something everywhere! But not to tourists, to each other. This is the ultimate locavore economy. You need it, you go buy it on the street.

Angela labeled this photo "Vietnamese Food Truck"

So I ask a few people who I THINK are renting scooters for directions. Thank god I was smart enough to get a card from the hotel with the address on it before we left. They point in a couple of directions. Seems sketchy but we press on. I ask a few more people, the correct waving gesture leads down this jacked-up 5 foot narrow alley with people all lined up selling EVERYTHING. And people are walking, riding scooters, pushing bikes, it's madness!

We look at each other and Dave is like "there is no way they meant for us to go down the alley." And I'm like, "Dave, I am going down this sweet jacked up alley!"

And off we go. Remember that rooster from earlier in the story? This is where I meet my rooster friend face to face. Only he was dead.

Pretty much two steps into the alley, and the smell hits me like someone had cuisinarted every meat, fish, spice and general foreign flesh bit, soaked it in a towel, and held it over my face. To my credit, I did not throw up. I was sidestepping scooters, trying not to tread on live fish, and completely freaking out that I was carrying all my travel cash in my shoulder bag. Total sensory overload. YES! This is why I love travel!

Our Saigon adventure has truly begun!"

Stay tuned for more...

Countdown to FOODCATION

Here we are at the jumping off point for 2012. Our budgets are done. We have hired a fantastic new executive chef and two new event planners. We are getting ready to announce a new division for Two Caterers. AND any day now our adorable food truck SWEET CARROT will be driving through your favorite Columbus festival and featuring locally-inspired, delicious bites in the $3-$10 range.

More about all of these exciting things coming soon.

In the meantime, what’s an inquisitive, driven business owner to do for inspiration? How about convincing one of my co-workers to go to Vietnam for two weeks! Duh.

Chef Dave and I depart this Sunday for a 26-hour journey to Ho Chi Minh City where we will begin a two week culinary tour from the South of Vietnam, up the coast to Hanoi, and back to old Saigon before returning home on March 11th. We hope to be inspired by what we experience, and I will be sending home posts and pics as I can.

Check in daily to see what and where we are up to, and wish us luck!
Cảm ơn bạn,
Angela

A very nice thank you...

We received a very nice email today from Catalina:

Carly,
I just want to let you know that the dinner you prepared for us last week completely exceeded my expectations! She has been taking control of the phones by being the first point of contact. She makes sure that the you reach the correct person for your needs and will answer any immediate questions you may have.

We realized that there were some customer concerns about response times and attentiveness during the busy season. We have added Aimee to the team to fix these issues and to add a bit of sunshine to the office. Her goal is to make sure you get an answer to your question within the day if at all humanly possible!

Aimee just returned to Columbus after working for a top catering company in Boulder, Colorado. We are actually one step closer to achieving the dream. Introducing....

OUR FIRST HYBRID!

The 2011 Ford Escape Hybrid is the only small hybrid crossover SUV that gets a combined 32 miles per gallon. This versatile and efficient urban runabout has 66.1 cubic feet of cargo room - perfect for hauling an entire buffet service to your event.

We scored the LAST white 2011 Ford Escape Hybrid on the eastern seaboard with the help of Gary Kujanek at Ricart Ford. Delays in underwriting caused delays in getting the highly sought-after vehicle, but Ricart Ford went above and beyond (I think they may have used a pitchfork at times) to hold the vehicle for us.

Even when they were getting phone calls from across the country asking about the car, they held it.

And when days and days went by and a holiday weekend pushed things back further, they made sure to let us know that they were still holding it.

And finally, when a busy day kept us from picking up the car, they offered to drop it off to us.

Ricart Ford knew how much this car meant to us, and we are now one step closer to fulfilling our alternative energy dream!

Fruits (& Vegetables) of Labor 2011

This growing season is turning out to be a good one for the Two Caterers' garden.
